As you may know... this family loves their ice cream, usually of the homemade variety. You can see some of our fave recipes here and here.
But today, we mixed it up a bit and went with a little store bought... with a twist, of course. The summer is quickly coming to a close, so I have been trying to come up with a special treat for the kids every day of this last week we have together. Yesterday was a trip to the snow cone stand. Today, Orange Ice Cream Cups... a little something I swiped from the fabulous, Ms. Paula Deen.
It's easy and, if you like orange, absolutely delicious on a hot, summer day. Here's what you do...
Mix equal parts of vanilla ice cream with orange sherbet. Paula's recipe calls for 3 cups of each, and she says place all in a large bowl and mix.
After a few minutes of that, my arm was exhausted, and I had an epiphany. The KitchenAid!
So much easier, not to mention, ten times faster.
After that, comes the fun part... of which I didn't get one single picture of because my hands were covered in juice, and I had three little helpers providing way too much help. But here's what you do...
Cut the tops off several oranges. (We used three, but you can use up to six.) Scoop out the pulp and juice, keeping at least 1/4 cup, and set the hollowed out orange cups aside. (Paula suggests keeping 1/4 cup of pulp and juice, but I think you could use more.) Now just add your pulp and juice to your ice cream mixture and stir (or let the KitchenAid stir for you). Now pop it all back into the freezer to set up a bit before serving.
To serve, use your hollowed out oranges as bowls and garnish with a slice of orange, and there you go....
Fun enough for the kids, but also perfect to serve big people as well. It's always a hit around here... well, it is ice cream.
